{ Cheesy Muffin Recipe }

My favorite BBQ place here in Atlanta is Jim n’ Nick’s. While waiting on your food they bring over these yummy, cheesy muffins, that I was determined to find out how to make. I have found this recipe mimics them the closest.

Prep Time: 10 minutes
Cooking Time: 15 – 20 minutes
Ready in: 30 minutes
Difficulty Level: Low

Cheesy Muffin Recipe:

Ingredients:
1½ cups – Flour
1 cup – White Sugar
1 cup – Shredded Cheddar Cheese
¾ cup – 2% Milk
1 – Egg (beaten)
4 tbsp. – Butter (softened)
1½ tsp. – Baking Powder
¼ tsp. – Vanilla
1 can – Pam spray or other non-stick pan grease

Preheat oven to 400°. Mix ingredients together and pour into a greased muffin pan.
Bake for 15 – 20 minutes.

I always add more cheese. I actually add about a cup and a half, instead of just a cup. If your muffins are smaller, make sure to watch them, as they will cook faster and burn. I also use whole milk, as I refuse to buy a whole thing of milk for ¾ of a cup.
